Destemmed berries enter a sealed bath whose density the user sets; perforated paddles carry the floating, less ripe berries to one exit and the submerged, riper ones to another, so a batch can be sorted or split by ripeness. It works with hand or machine harvest. Socma publishes the Densibaie at a maximum 5 t/h (3,775 x 1,364 x 1,859 mm) and the Densibaie XL at 10 t/h (3,775 x 1,665 x 1,859 mm); the draining grates are stainless steel.
